Cook once, Eat Thrice "Cuban Sandwich Nachos"

In these uncertain times here’s an easy way to make some delicious Cuban Mojo Pork and use it to make three different dishes. I’m starting with Cuban Sandwich Nachos! Here’s what you need.

Ingredients for the Cuban Mojo Marinade:

  • 1.5 cups of sour orange juice. If not available you can use 1 cup of orange juice and half a cup of lime juice.

  • 15-20 garlic cloves

  • 1 cup of chopped onion

  • 1 tsp of black peppercorn

  • 2 tsp of powdered Oregano and one sprig of chopped fresh oregano.

  • 2 tsp of Salt

Ingredients for the Pork:

  • 2-3 pound boneless pork loin

  • ¾ cup chicken broth

  • The Cuban Mojo marinade you just made.

  • 1 tsp salt

  • ½ tsp pepper

  • ½ tsp cumin

Ingredients for the Nacho Mojo Sauce:

  • 6 cloves garlic, finely minced or mashed to a paste with mortar and pestle.

  • ⅔ cup extra-virgin olive oil

  • Juice from a lime

  • Salt to taste

  • Chopped Parsley for color.

Ingredients For The Nachos:

  • Your cooked mojo pork

  • Swiss Cheese

  • Sweet and Salty Plantain Chips (Use Tortilla Chips if you can’t find plantain chips)

  • Chopped tomato

  • Chopped Onion

  • Slices of sweet ham

  • Nacho Mojo Sauce

Directions:

Mojo Marinade For The Pork :
1. Mash the peppercorn, salt, and garlic with a mortar and pestle until it becomes a paste.

2. Add the juice and powdered oregano to the paste.

3. Combine this mixture with the chopped onion and fresh chopped oregano. Let sit at room temperature for at least an hour before using it.


The Pork:
1. Season the pork loin with salt and pepper.

2. Rub a little bit of olive oil all over the pork.

3. In an oiled skillet brown the pork loin for a couple of minutes on each side.

4. Add all ingredients to slow-cooker and simmer on low for 8-10 hours until pork is falling apart.

The Mojo Sauce to Top the Nachos:

1. Mash garlic cloves into salt and lime juice with mortar and pestle. Once it's combined put it in a container that you can pour from like a Pyrex measuring cup.

2. In a separate saucepan, heat olive oil until bubbling, and then pour over the mashed garlic mixture.

3. Now add the chopped fresh parsley.

4. After about 30 seconds it's ready to be poured over your nachos for serving.

Ingredients For The Nachos:

  • Your cooked mojo pork

  • Swiss Cheese

  • Sweet and Salty Plantain Chips (Use Tortilla Chips if you can’t find plantain chips)

  • Chopped tomato

  • Chopped Onion

  • Slices of sweet ham

  • Mojo Sauce

Directions to Build Your Nachos

  1. Layout your plantain chips on a small sheet pan.

  2. Layer a few slices of sweet ham

  3. Add a layer of shredded swiss cheese

  4. Add your Mojo Pork, pickles, onions, and tomatoes.

  5. Bake your Nachos at 350 degrees for 12 min

  6. Top with your mojo sauce and serve!

Now it’s time for dish number 2.  I took some of my leftover mojo pork and made a delicious breakfast hash.

Here’s what you need

Ingredients:

1 Portion of Mojo Pork

1 small sweet potato (grated)

1/2 onion (grated)

1 Red Apple (grated)

1 Egg

Olive Oil

Salt and Pepper to Taste

Directions:

  1. In a skillet heat up some olive oil on medium heat.

  2. Sautee the onions until translucent.

  3. add sweet potato and cook until tender

  4. add the apple and cook until they begin to soften

  5. add the pork and cook until warm. In a separate skillet cook an egg to your liking. 

  6. Add egg on top of hash.

  7. Salt and Pepper to taste.

  8. Garnish with fresh thyme.

It’s dish number 3 time. I used the last of my mojo pork and made a Spanish style baked tortilla. I’m sharing the recipe for a single portion so just multiply for the amount of people you’re cooking for. 

Ingredients:

1 Portion of Mojo Pork

A couple os slices of manchego cheese

A few slices of vine tomatoes

1 tbs chopped onion 

1 tbs chopped onion 

2 Eggs beaten

2 tbs milk or non-dairy milk

Olive Oil

Salt and Pepper to Taste

Directions:

  1. In a skillet heat up some olive oil on medium heat.

  2. Sautée the onions until translucent.

  3. Pre-heat your oven to 375 degrees

  4. Oil your baking dish and add your sautéed onions, beaten eggs, mojo pork, green onion, tomato slices, milk, and manchego cheese

  5. Bake for 20-25 minutes until the top of your top or your tortilla is golden brown. 

  6. Remove from the oven and let cool for 8-10 minutes before digging in.
