Savory Rosemary "Paloma" Cocktail Recipe

It’s 95 degrees in LA and the perfect time for a savory and refreshing cocktail.  The Paloma is a drink I discovered 16 years ago when I moved to the west coast and it’s become a favorite of mine on these hot days.  Here’s a version of it I love making at home.

  • 2 ounces of Rooster Rojo Reposado Tequila

  • 2 sprigs rosemary 

  • 1/2 ounce simple syrup

  • 1 1/2 ounces grapefruit juice

  • 1/2 ounce lime juice

  • 1 ounce grapefruit soda

  • 1/2 teaspoon kosher or cocktail salt for rimming the glass 

Directions:

  1. Salt your rim

  2. Fill your salt-rimmed glass with ice.

  3. Add the rosemary and simple syrup to a cocktail shaker (no ice) and muddle until you can smell the rosemary 

  4. Add the tequila, grapefruit and lime juices, and ice to the shaker. Shake vigorously for 10-15 seconds and double strain (pour over a mesh strainer) into your ice-filled glass. 

  5. Top off with grapefruit soda.
