A Night of Culinary Fireworks at Verse LA

But this chef’s tasting menu at Verse LA was an emotional experience disguised as dinner. If you’re on the hunt for the best fine dining in Los Angeles or an unforgettable anniversary dinner spot, do yourself a favor and put Verse at the top of your reservation list.

On July 5th, I had the pleasure of celebrating another year with the love of my life, Yisabel. And as if that wasn’t special enough, we were treated to an eight-course tasting menu that felt like a Michelin-starred symphony of flavor.

Here’s what went down. Spoiler alert: I’m still full… and still smiling.

First Course: Bonny Melon

The menu read: “Just melon on ice, trust me.”
I did. And wow. Sweet, chilled, and unpretentiously perfect. A refreshing start that whispered, “This is going to be a ride.”

Second Course: Wild Baja Hiramasa

This dish screamed Los Angeles coastal cuisine. Bright serrano aguachile, umami-rich bottarga, and purslane brought spice, texture, and acidity in all the right ways. A knockout bite of modern seafood dining.

Third Course: Scallops

Seared to perfection and bathing in a pool of shirodashi, pixie citrus, and capers. A perfect balance of buttery and briny—truly elevated California fine dining.

Fourth Course: Caviar Egg

You had me at “caviar.” Layered with pommes purée, tiger prawns, and cured egg yolks, this dish was like a decadent love letter to luxury. If you’re searching for the best caviar dish in LA, this is it.

Fifth Course: Octopus

Tender, smoky, and bold. The paprika aioli, sofrito, and squid ink supplì made this one of the most creative octopus preparations I’ve ever had. Los Angeles foodie-approved.

Sixth Course: Wild Boar Ràgu

Rustic meets refined. The depth of flavor from the fennel pollen and tomato, combined with rich Grana Padano, made this a standout. If you love handmade pasta in LA, don’t skip this.

Seventh Course: Japanese A5

Let’s talk about melt-in-your-mouth. This Japanese A5 wagyu was silky and indulgent, with Bordelaise sauce, chives, and pommes aligot that deserve their own round of applause.

Dessert: Guayaba Sorbet

The closer. Melon granita, cherries, and lavender blossoms—this was summer in a spoon. Light, floral, and completely transportive. A sweet finale worthy of the journey.
